Simple Pumpkin Muffins

1 box chocolate cake mix

1 can pumpkin

Mix together and spoon into a muffin tin. Bake according to package directions for cupcakes. Your kids won’t taste the pumpkin—or the vitamin A.

Pumpkin Pudding Cake

6 eggs

1 12-oz. can evaporated milk

1 1/2 c. (300 g) sugar

30 oz. (2 small cans) pumpkin

1 t. ginger

1 t. nutmeg

1 t. salt

2 t. cinnamon

1 box yellow cake mix

1/2 c. (113 g) butter or margarine

Mix all but cake mix and butter together. Pour into greased 9 x 13″ pan. Cut margarine into cake mix until crumbly; spoon on top. Bake at 350 F (177 Celsius, for our international friends!) for 45-60 minutes or until golden brown. Yummy!
